Apan-apan: Kangkong with Pork and Ginamos-Iloilo (Salted Shrimp Paste)
It's actually my first time to try cooking this dish using the original 'ginamos ng iloilo' (salted shrimp paste). I also used pork, not the usual Iloilo's apan-apan with chicken meat.
Iloilo's 'ginamos' is different from the 'alamang bagoong' of Luzon, or the 'uyap' of the Cebuanos or Mindanaoans. Primarily, it's not as salty as the other shrimp pastes; it's wrapped in dried banana leaves; it's not as watery as the others; the texture is finer; the color is more natural (lesser food coloring mix) than the pinkish shrimp pastes; and etc.

Well, the recipe basically consists of
(1) kangkong (leaves and stalks)
(2) meat - pork or chicken
(3) 'ginamos-iloilo' or bagoong alamang
(4) tomatoes
(5) onions
(6) garlic
(7) vinegar
(8) seasoning
The way I cooked Apan-apan:
1) Saute garlic until slightly brown, then add onions, and tomatoes
Ginamos-Iloilo (Salted Shrimp Paste)
2) Add in meat (pork or chicken), a pinch of salt, a little soy sauce and seasoning; simmer while occasionally stirring until cooked. Add a bit of water if it starts to stick on the pan.
3) Add in 'ginamos' or 'alamang' to stir fry.
4) Add in kangkong leaves and stir fry.
To complement, pair with 'daing na bangus' for a delicious pinoy (Filipino) meal.

I thought blanched alugbate will not be that appealing to the taste buds. It was my niece who taught me how to prepare it and let me try it. Blanching the alugbate leaves can be done by just pouring hot water on it. It's just like washing the alugbate leaves with hot water, so that it would still be a bit crunchy.
I think the secret to a tasty blanched alubate would be to match it with a chili hot, a bit sweet and sour vinegar. To iterate the sauce details... mix to vinegar: chili flakes or ground pepper, crushed or powdered garlic, a little salt and a little sugar. Mix to your desired taste and sourness (hmmm).
You just have to dip the blanched alugbate leaves to the vinegar sauce.
As for the spanish sardines, I just bought the canned (Philippine made) ones. You can heat it or just have it straight from the can. It's a light meal yet a tasty one. Happy eating pinoy meals!

House Bill No. 4244, known as the RH Bill, is completely entitled as the "Responsible Parenthood, Reproductive Health and Population and Development Act of 2011".
I personally keep quiet when asked of my stand regarding the RH Bill. As a Catholic and born in a large family, my natural leaning is to go against this Bill... I have my reasons, I have my faith...
... but asking others why they support the RH Bill, they only cite the poverty that they claim to be caused solely by the rising population. I don't condemned people promoting the Bill, but I am indifferent to persons who strongly approve the Bill without even having read the entire text of it.
...well, honestly, I am also reluctant to say I am against the House Bill No. 4244 just because I am a Catholic, without even trying to read the RH Bill.
Ever wondered what cities in the country are promising locations for condominium developments? Inquirer Property did a quick survey of top developers and found out that Cebu, Angeles, Davao and Cagayan de Oro topped the list, which also included other promising areas such as Marikina and Muntinlupa.
Bobby Dy, Ayala Land Inc. senior vice president and head of residential business group, said that “Cebu, for us, is a growing market.”
“As an important city in the South with the various ingredients of tourism, industry and increasing affluence, we have seen Ayala Land Premier, Alveo and Avida entering the market with a good deal of success. Likewise, areas like Angeles, Davao and Cagayan de Oro are promising centers of growth—these are areas where we see a growing acceptance for condo living, and as such we will be bringing Alveo and Avida products to these markets in the coming months.”
Alejandro S. Mañalac, board vice chair of National Real Estate Association, said Marikina “would be nice and it has actually started hosting several projects.” Mañalac, who recently joined Century Properties Inc. as senior vice president, said “Muntinlupa also has a good potential, especially with the rehabilitation of the Philippine National Railway. However, developments there should only be low- to medium-rise, no frills condos.....”
